A Quick Pasta Dish

Here’s a quick pasta dish anyone can make from ingredients that are usually readily available in any home.

Just some olive oil, a diced tomato, oregano, garlic, leftovers from breakfast (this case corned beef omelette), some chili flakes (i used some diced up chile de arbol and pasilla bajio for this). And you’re golden.

Boil the pasta, while you’re doing that prep the ingredients, fry it up halfway. By then the pasta that’s about 100 grams (good for one serving) will be just about cooked right before it’s al dente. Then just drain the pasta, but don’t forget to leave some of that pasta water into the pan where you’re gonna cook the noodles in along with the rest of the ingredients. And then just add the pasta into the pan, then cook it the rest of the way on low heat until the pasta is perfectly al dente.

Don’t forget to use a good pasta brand coz last time I told someone how to make this, they ended up overcooking the pasta coz they used crappy stuff like Royal.

Takes about 20 minutes to make it, but well worth the effort.

You can add whatever you want, so long as you think it’ll work with it. Pretty basic pasta, and best of all it’s just a bunch of stuff lying around in the kitchen.

A Nice Organic-ish Snack

Took a few leaves of some of my herbs and tried out mixing them together in an open faced sandwich. Took some sage, pineapple sage, cuban oregano, mint( java mint, pepper mint, and choco mint), basil and arugula for a sandwich I was gonna make. So I washed them up, cut everything up in a chiffonade (roll ‘em up and cut them into strips) to nicely distribute the leaves into the sandwich. Got some nice hungarian salami in the freezer and put one piece per slice of bread. Then I put the cut up herbs on top of the salami, then a few cuts of el cheapo quick melt cheese, some slices of regular grocery tomatoes and voila, a sandwich. Toasted them up nicely and then at the end a splash of extra virgin olive oil.

So the other day I decided to harvest a bunch of basil from my basil patch. My homegrown, organic, basil has just grown insane the past few days so I decided to top them all off and make pesto out of it.

Tomato And Basil Pesto Pasta Recipe

Here’s what I did, this is the lazy way of doing it.

Make tomato sauce ahead of time, buy a jar of ready made pesto and just boil up some pasta.

Here’s the recipe for the tomato sauce (I kinda grabbed this off of Alton Brown, so….it’s pretty much the same way I make mine.)

Quick Bean Sprout Salad

I just came up with this a couple days ago when I bought bean sprouts from Hanaro, a korean grocery shop near my place. When I had it I found it lacking a zing element to it. I guess this needs some sweet peppers and a squeeze of lime or lemon to add some flavor. And maybe some chili flakes to spicy it up. =D
